Arugula: A Powerhouse of Powerhouses


Once again, I'm presenting to you a cruciferous powerhouse: arugula. In fact, arugula could be one of the most nutritious of all the the salad greens. Cruciferous vegetables are part of a group of vegetables that research has proven may provide protection against cancer because they're loaded with vitamins, minerals and phytochemicals: that is, antioxidants, phyto-oestrogens, and compounds that modify potential toxins and carcinogens. They are also a rich source of chlorophyll, which cleanses and energizes the blood and supports healthy skin. Other cruciferous vegetables include kale, chard, broccoli, bok choy, mustard greens and cabbage.
